Withering for Sforzato \"Ronco del Picchio\" by Fay that continues, in small boxes, between the harvest in October and mid-December; then fermented in stainless steel for 20 days, staying to macerate on the lees for at least 10 days before being transferred for 12 months in barrique. The result is a great Sforzato della Valtellina, full, rich, complex and really elegant.
