In the vineyard, the aim is to have a healthy fruit, as intact as possible, with full ripening. The base wines ferment spontaneously in steel, and are then blended for the re-fermentation in the bottle typical of the classic method. The liquid is \u003cstrong\u003ehardly dosed and contains no added sulphites\u003c\/strong\u003e.\u003c\/p\u003e\r\n\u003cp\u003eThe \"36\" Spumante Metodo Classico Brut by Casa Caterina has a luminous, fairly intense straw yellow colour. It is undoubtedly Aurelio's simplest and least rich wine, but no less interesting for that. The nose presents hints of lime, jasmine, citrus and tropical fruit, always elegant and never caricatured. The sip is full and textural like all Casa Caterina wines, but slimmer than its older brothers, making it a wine for more \u003cstrong\u003ecarefree and transversal\u003c\/strong\u003e consumption.
