The harvest of Cataratto "Lucido" by De Bartoli takes place at the end of the first week of September and the clusters follow the process of vinification, with the spontaneous fermentation in temperature-controlled stainless steel tanks due to natural yeasts and, with the use of minimal doses of sulfites, and the aging takes place for 7 months in steel tanks on the lees.
